What are the differences between these and rt-8000 or 9100 rotors, specifically in terms of weight, performance and aerodynamics etc??

The simplest of answers is the question of weight,
Both the 9100 and RT99 rotors weight the same with Shimano listing them at 118 and 118.1g respectively in a 160mm diameter.
The RT800 rotors are listed at 128g.
We have been unable to find any data about the aerodynamics of each individual rotor or their respective performance values, unfortunately. What we can say is that the design of both the RT800 and R9100 should certainly be more aerodynamic simply because of the addition of the aluminium cooling fins which also provides better heat sink than the RT99.
